Debbie Thomas is the mastermind behind the vibrant culinary restaurant that has changed Paso Robles dining scene. Located at 1313 Park Street, Thomas Hills Organics is a bistro with a changing menu featuring ingredients grown on a local farm, served with regional wines. The venue itself is a brick clad rustic establishment surrounded by modern touches and gentle strewn lights. THO offers quintessential farm-to-table cuisine. Truly love at first bite, no matter what time of year you visit, you can expect rich flavors emerging from the surrounding local grounds.

The menu is sprawling with an array of complex flavors from local farms. For example, the Heirloom Tomato Salad is packed with tomatoes from Loo Loo Farms (a 2.5 acre micro farm in Paso Robles).  Loo Loo Farms has a mission of providing wholesome, nutritious food to local chefs while protecting and nurturing the earth. You’ll find sprinkles of local flavors on the menu which will heighten the culinary journey and love of Paso Robles. The Summer Burrata Salad is as fresh as it sounds. Fresh strawberries and burrata atop romaine lettuce sprinkled with sunflower seed “hummus,” toasted hazelnut vinaigrette and hemp seeds with a citrus juice vinaigrette. If summer was defined by a salad!

“When I first opened, few people knew or cared what farm-to-table was all about, but now I think most people expect it when they dine at higher-end restaurants,” she says. “Over the last couple of years, we now have more casual restaurants, but I believe we need some higher-end restaurants to attract tourists from major cities.”

Another stand out item, would be Spiced Beef Empanadas. THO does a spectacular take on a worldwide favorite. Far from ordinary, these empanadas are topped with house-made crème fraiche, citrus slaw, and a dried fig pesto.

The Bone Marrow Crusted Rib-Eye is as spectacular as it sounds! If there is one item on the menu to order – this is it! It’s simply what dreams are made of. The rib-eye is charred to perfection and the bone marrow holds in the juices from this big slab of meat. The tender steak is topped with green pepper bordelaise, a nice finish to a perfect meat.
