The Drink We'll Be Making ALL Summer - Spiked Peachy Iced Tea by Daphne Oz

Summer is officially around the corner and we’ve got the BEST drink that you’ll want to add to your rotation! The Spiked Peachy Iced Tea by Daphne Oz is refreshing as ever and basically, summertime in a glass!

The TV host, bestselling cookbook author, and natural foods chef Daphne Oz has created the new Spiked Peachy Iced Tea cocktail kit in partnership with Plume & Petal, a delicious vodka infused with natural flavors that was recently launched!  It’s the perfect time to indulge in vibrant, fresh flavorful cocktails and the cookbook author and TV-host has made this easier than ever with the launch of her first-ever cocktail kit via Cocktail Courier, available for order NOW.

We got a chance to speak with Daphne on the libations as well as her ideal recipe to match! Check out the below interview for additional information!

Identify LA: What inspired the Spiked Peachy Iced Tea?

DO: Iced Tea is one of my favorite drinks, especially during a hot summer day! With the Spiked Peachy Iced Tea, my goal was to create a delicious and flavorful cocktail that would enhance the subtle sweetness and delicate aromas of the Plume & Petal Peach Wave in a way that feels eminently sippable. I also love the way the juicy peach and bergamot flavors work together to create something that feels sun-squeezed and special.

IDLA: This beverage is perfect for the hotter temps! What do you love most about it?

DO: I love that this cocktail incorporates a gorgeous citrus-scented Earl Grey tea and dehydrated persimmon garnish that pair beautifully with Plume & Petal Peach Wave and creates a delicious, elevated cocktail for warmer temperatures. But I think my absolute favorite thing is the bergamot salt & sugar rim I’ve included which highlights the juicy sweetness with a perfect bit of contrast and makes every sip feel elevated.

IDLA: If you had to summarize this drink in one word/one phrase, what would it be?

DO: Rinse and repeat! Or perhaps, just peachy.

IDLA: Favorite dish to pair with this beverage? Can you provide a recipe if so?

DO: If you’re looking for the a delightfully easy bar snack, the Spiked Peachy Iced Tea pairs perfectly with the Sweet & Spicy Pecans with Chipotle and Cumin from my new cookbook, Eat Your Heart Out! Pecans are so meaty, and I love how they take on rich, smoky chipotle heat and a tiny hit of coconut sugar to enhance their delicate buttery notes. And then you can cool down again with a lovely sip of spiked iced tea!

Ingredients:

1 egg white

3 tablespoons coconut sugar

1 teaspoon chipotle chile powder

1 teaspoon cumin seeds

2 teaspoons nigella seeds(optional)

Pinch of cayenne pepper

1/2 teaspoon sea salt

2 cups raw pecans

Recipe:

  • Preheat the oven to 300°F. Line a sheet pan with parchment paper.

  • In a medium bowl, whisk the egg white with 1 tablespoon water until pale and foamy. Add the coconut sugar, chipotle chile powder, cumin seeds, nigella seeds (if using), cayenne, and salt and whisk to combine.

  • Add the pecans and toss to coat. Spread evenly on the prepared sheet pan.

  • Roast for 25 to 30 minutes, stirring every 10 minutes or so to keep the nuts from burning or sticking to each other. They should be a caramelized and deep golden brown and smell richly toasty. They will continue to crisp as they cool. I like to let the nuts cool on the pan and use a wooden spoon or spatula to break up any clusters apart so you get nice, individual pieces. Store in an airtight container for up to 1 week.

SPIKED PEACHY ICED TEA RECIPE:

Ingredients

3 oz PLUME & PETAL™  Peach Wave

3 oz Earl Grey Tea

½ oz fresh lemon juice

¼ o simple syrup 

Top with club soda

Garnish: Dehydrated persimmon

Rim: Bergamot Smoked Salt and Sugar Mix

Instructions

  1. Boil 8 oz. of water, add 1 tea bag and let steep for 5 minutes. Let tea cool for 10 minutes in the refrigerator.

  2. Cut a lemon wedge and moisten the rim with it. Next, evenly dip the rim into the bergamot smoked salt and sugar mix.

  3. In a highball glass, add ice, PLUME & PETAL Peach Wave,Earl Grey Tea, lemon juice, and simple syrup.

  4. Stir to mix ingredients.

  5. Top off with club soda and garnish with dehydrated persimmon.
